Useful pictures: recipe of the "Wild Caesar"

Maybe this is not a perfect picture (will add better ones later), but this is a very good salad! And it's very easy to make.

You will need:
1 grapefruit
2-3 chicken breasts
50-75 g standard or large cut croutons
Romaine lettuce (I used one medium napa cabbage instead)
Some sesame seeds
Some oil to fry the chicken
Parmesan cheese
Caesar Salad dressing - a ready one or home made

So we start!
First salad leaves. Tear them with hands instead of cutting. If you use napa cabbage, use only the green/ young part of the leave. Now peel grapefruit and then carefully remove the membrane (nice guide how to peel grapefruit, important so that the salad does not get bitter). Add grapefruit to the salad in small pieces.
Cut chicken breast into a thin (~1 cm) slices about the same length. Warm up a frying pan with some oil. When warm, add some of sesame seeds and warm them up about one minute. Then add chicken and salt it a bit. When the chicken is light brown (and done), take it off the stove.
Add some more sesame and croutons to the salad leaves and grapefruit, carefully mix it with chicken. Add Caesar dressing, grate some Parmesan over and serve!

Dressing tips:
It is of course better to make your own dressing. You can always find a recipe online, but here are some tips:

  • It is nice to make a lot of dressing :)
  • You need neutral olive oil, preferably not extra virgin, make sure it is not bitter.
  • Don't put too many egg yolks.
  • If you cannot find Worcestershire sauce, don't bother with it, but try to get some anchovy in oil.
  • If you do mess up with oil/eggs etc., add some good mayonnaise (like Hellmanns) to fix it. Some recipes do include it.
  • Another way to fix the dressing is to blend in some grated parmesan.
