Saturday morning is my favorite time: whole weekend is ahead, and you can do something beautiful and tasty. We have made some fenalår this year and it was one of the things I saw when I entered the kitchen. Then I realized there was a sweetie in the fridge that I hadn't finished yet. And then I got a plan. :)
I really like sweetie (oroblanco), and not just because it's sweet. It's juicy and has taste. It's a hybrid of grapefruit and pomelo. The sweetie is characterized by its changing hue – from green to yellow – as the season progresses.
For two portions you will need:
1 field salad (lamb's lettuce / valerianella locusta)
1 sweet mango
1 sweetie
Few slices of fenalår (salted and dried back leg of a lamb)
Some strong goat cheese (I used cheese "Wyngaard Chévre Grys" from Netherlands)
Some sesame seeds for decoration
For dressing: some hazelnut oil, lemon balsamic cream and olive oil
Let's get started!
Pill sweetie and divide each lobule in two or three pieces.
Pill mango and cut the pulp in small cubes (about 1-1,5 cm wide).
Put salad leaves in the plates you are going to serve the salad in. Add mango and sweetie pieces and sesame seeds, and mix them carefully using your hands to avoid damaging the leaves.
Now cut fenalår in small pieces and grate the cheese.
Sprinkle cheese and fenalår over the salad.
To make the dressing I have used about 1,5 teaspoon lemon balsamic cream, 2 teaspoons of hazelnut oil and 2-3 teaspoons of olive oil. Mix it all together with a spoon and then sprinkle over the salad.
